Our evaluation framework looks at several dimensions:

Culinary Craft

Does the kitchen demonstrate clear technique and understanding of its ingredients? We look for evidence of skill—whether that's in knife work, temperature control, sauce construction, or the nuanced layering of flavors. A restaurant doesn't need to serve haute cuisine to meet this standard; it needs to show that someone cares about doing it well.

Ingredient Quality

What goes into the dish before cooking matters as much as what happens during it. We pay attention to sourcing choices: Are they buying local when it makes sense? Are their proteins fresh and ethically handled? Does their produce selection reflect the season? Good restaurants make deliberate choices here, and it shows in the plate.

Service & Hospitality

What We're Not

The Salt & Copper Report isn't a ranking system. We don't use stars, points, or other numerical systems that can oversimplify something as complex as food and hospitality. We also don't review restaurants that ask us to—recommendations are earned through genuine dining experiences, not trading coverage for advertising.

We're not looking for novelty for its own sake. The trendy pop-up and the established neighborhood trattoria are evaluated by the same standards: Does it do what it's trying to do well? Is there care evident in the execution? Will someone come away satisfied and wanting to return?

And we're not pretending objectivity where it doesn't exist. Personal taste matters. We have preferences and biases, and we're transparent about them. What we offer is the kind of detailed, honest assessment you'd get from a food-loving friend who's spent time learning how restaurants actually work.
